Cloudberries from Hardanger

Cloudberries are one of my favorite berries. They taste like Norwegian nature and reminds me of days spent in Hardanger, the west coast of Norway, where my boyfriend's parents lives. A place in between fjords and mountains, where locally harvested cloudberries always makes its way on our plates. This salad is inspired by my mother in law, Vigdis, and it's the perfect combination to a veggie tapas table, or as a side to what you're eating. 

Ingredients

Cloudberries

1 bag of ruccola

A handful of walnuts

5 teaspoons Oatly creme fraiche (iMat) or chèvre

3 tablespoons balsamic vinegar

Instructions

1. Spread the ruccola out on a plate and top with the rest of the ingredients in desired amounts. 

2. Pour the balsamic vinegar over on top.
