Licorice Balls

Just let me start by telling you that this is the best thing ever. I got a total addiction on licorice balls a while back, and the addiction doesn't seem to fade. I won't tell you how many I've had today, but let's just say that there's none left, and that I made a batch yesterday. Haven't had them in a while now (like a week or something) so I was a bit eager rolling the dough as you can probably see in the picture, but no worries, they'll taste amazing no matter size and appearance.

Using a good licorice root powder is important, for both taste and health benefits. I combine two powders, all natural ones, without any preservatives or additives. They're both from Sweden, but you can order at least one of them online to Norway. I'm sure you can find similar where you live, but just know that all licorice powders doesn't necessary taste the same. I use a raw licorice powder from "urtekram" and one from "Kung Markatta", used together, magic is created. 

Licorice is an adaptogen, like mentioned in one of my previous posts, and is said to have many health benefits. 

I use medjool dates for texture and taste, and plain, natural cashews. I also soak the cashews, before drying them in the oven at 50C until crispy. Quite a process, but so worth it, as you remove anti nutrients, making them easier to digest and more nutritious.

Ingredients

5 dl cashews 

3 dl dates

1-2 tsp himalayan salt

1/4 tsp vanilla 

1 tsp coconut sugar

3 tbsp licorice powder

Instructions

1. Put everything except the dates in a foodprocessor.

2. Blend everything until the cashews are chopped to crumbles.

3. Add dates and blend until dough is achieved.

4. Roll into bite sized balls and roll in more licorice powder.

5. Lay flat on a plate or in a container and freeze.
